Festive Spice Cookies – A Christmas Treat

Lots of spice & all things nice, these delicious cookies are sure to be a hit this Christmas!

What you’ll need:

1 cup Almond meal
1 cup Oat or brown rice flour
1 Egg – whisked
1 tsp Baking powder
1 tsp Almond/Cashew/Peanut butter
2 tbsp Coconut oil
1/4 tsp Pink himalayan salt
1 tsp Vanilla bean paste
2 tsp Ginger – grated
1 tsp Nutmeg
2 tsp Cinnamon
1 tsp Natvia
2 Medjool dates
2 tbsp Maple/Rice syrup

What to do:

1. Preheat oven to 180 degrees Celsius.
2. Sift flour into a bowl.
3. In a food processor combine flour, spices, ginger & dates, blitz until combined.
4. Add remaining ingredients & pulse until a sticky dough has formed.
5. Flatten dough (until it’s about 1.5-2cm thick) on a piece of baking paper, transfer to a tray and pop in the freezer for 5 minutes until slightly firm.
6. Cut cookies out using festive cookie cutters (stars, gingerbread men, christmas trees) and transfer back to a lined baking tray.
7. Place cookies into the oven and bake for 20-30 minutes until golden.
8. Serve sprinkled with a little extra cinnamon or nutmeg.

Top tip: Do you have a Thermomix or high powered food processor? Then you can ice your gingerbread men guilt free!

Cookie Icing:

What you’ll need:

1/4 cup Natvia
1/2 tsp Coconut oil
1/2 tsp Vanilla bean paste
Green/Red natural food colouring.

What to do:

1. Add Natvia to Thermomix or food processor & mill until it has formed icing sugar, transfer to a bowl.
2. Add coconut oil, vanilla bean paste & food colouring, stir until well combined.
3. Pop into the refrigerator for 5 minutes until slightly thick.
4. Spread onto cookies & decorate as you please!
